2007 Excel shared file - data corrupts when more then one person changes or adds data.

We have a list we maintain in Excel to track projects we are bidding on, there are no formulas used or tables in this file.  It is just text, dates and symbols.  There are 13 columns and the number of rows increases daily as projects are added. 
I recently shared this file to allow another user help keep it up to date.  After the share was turned on we noticed that data was changing randomly, for example if a cell was left blank intentionally, the cell would later appear with data inserted
in it.  Also, we use symbols or text in one of the columns depending on the projects status.  I have noticed that the cells with text in them will revert to the wing ding (or symbol) randomly.  
(Sidebar: I turned on the Share feature by selecting Review, Share Workbook and checking Allow changes by more than one user at the same time. This also allows workbook merging.)
We cannot figure out what is causing this to happen. The only other thing that is done to the file is a sort. I will sort the data using one of two columns, both contain dates. 
Any suggestions or advice on how to keep this from happening will be greatly appreciated.

  1. Click Start.
